Ingredients:-
- 350 grams baby potatoes
- Oil for deep frying and 2 tbsp for making tadka
- 1 small chopped onion
- 2 black cardmoms
- 2 tbsp ginger paste
- 2 tbsp garlic paste
- 1 tbsp red chilli powder
- 1 tbsp coriander powder
- 1/2 tbsp cashew nut paste
- 1/2 cup tomato puree
- 1/2 cup yogurt whisked
- Salt, as per taste
- 1 tbsp dry fenugreek leaves
- 3-4 tbsp fresh cream
Directions:-
- Wash and peel the potatoes and dry them with the help of a cloth.
- Heat oil in a pan for frying the potatoes and deep fry them till lightly browned.
- Boil onion with one tbsp water, two black cardamom seeds for two to three minutes and grind them into fine paste.
- Heat oil in a pan and add boiled onion paste and cook until oil separates.
- Add ginger and garlic paste and mix it well.
- Add red chilli powder, coriander powder, turmeric powder, cashew nut paste, tomato puree and yogurt and mix well.
- Add deep fried potatoes and add approximately 3 cups of water and salt as per taste.
- Simmer it for some time and garnish with kasuri methi and dash of fresh cream and serve hot with paranthas or tandoori or butter naans.
