Dhokla

Dhokla is mostly famous in Gujarat but now it is becoming popular in another regions also. My family and friends like it very much as it is soft, spongy and juicy. Today I am sharing my recipe hope you all like it. So follow and share this recipe.


Ingredients:-
  1. Gram flour (Besan), 1 cup
  2. Sugar, 4 tbsp
  3. Salt, 1 tbsp
  4. Oil, 2 tbsp
  5. Curd, 1 cup
  6. Eno, 1 packet/1 tbsp
  7. Ginger and chilli paste, 1 tbsp
  8. Water as required
For Tempering:-
  1. Mustard seeds (Rai), 1 tbsp
  2. Oil, 1 tbsp
  3. Curry leaves, 7-8 leaves
  4. Coriander
  5. Water, 1 cup
  6. Green Chilli, 4 slitted
  7. Sugar, 4 tbsp
Directions:-
  1. In a mixing bowl sieve gram flour and add sugar and salt mix it well.
  2. Then add beaten curd and oil, for flowing consistency add water as per requirement, mix it thoroughly and leave it for fermentation for about 15-20 minutes.
  3. Heat the steamer and grease the mould or thali with oil.
  4. Then at last add one packet of eno and mix it by cut and fold method or making 8 method.
  5. Pour the batter into the greased mould or thali and place it in the steamer and cover the steamer with a lid and steam it for 15-20 minutes on low flame.
  6. After 15-20 minutes check the dhokla with knife or fork as if it cooks properly.
  7.  Then place out the mould from the steamer and cool it down and then cut it into square pieces.
Prepare the tempering:-
  1. Heat oil in a pan, add mustard seeds, curry leaves and green chillies and saute them.
  2. Pour water and add sugar and boil it and reduce the mixture until 3/4th of it.
  3. Pour the mixture on the dhokla and place it in the refrigerator so that it can cool completely.
  4. Garnish with coriander and serve it with green chutney and tomato ketchup.
